My mother in law turned me on to fried salami. Actually she put it in the microwave and cooked it like bacon and surprisingly it tastes much like bacon. So whenever I’m out of bacon I microwave salami and put it on my salads. It’s weird I know but it’s good. So while perusing Pinterest and all the bacon cups out there, I thought why can’t I do that with salami and pepperoni? It turns out you can and they are quite good!
All you need for this easy recipe is salami, avocado and grape tomatoes. The only thing you need to bake are the salami cups. I used a large muffin pan, because my slices of salami were large. Getting them perfectly in the cups is difficult and as you can see I didn’t spend much time making them perfect. I am not a perfectionist unfortunately so they aren’t as attractive as they could be. I bet Martha Stewart would make a damn better looking salami cup than me but mine would be done quicker. So I got that going for me. 😉
After you bake the salami cups you are basically done. I used raw tomatoes and avocados in mine and they were FABULOUS! My husband turned me on to his salami sandwich which is toast, mayo, salami and fresh garden tomatoes. It is truly the perfect sandwich. But I’m cutting out carbs so I scratched the bread and mayo and added avocado. It tastes a little like a California BLT…minus the lettuce and bread.
I bet you could come up with many different toppings for these salami cups. I am writing another post using pepperoni cups, roasted tomatoes (pictured above) and cheese to make Pizza Bites. Tomato Avocado and Salami Bites (a low carb Paleo snack)
A quick and easy low carb snack that you could also use as an appetizer.
sliced in half
- Preheat oven to 375 degrees.
- Press salami into a regular size muffin tin to form a cup.
- Bake for 10-15 minutes, checking after 10 minutes to see if they are brown and crispy but not burnt.
- Let salami cups cool a little and then fill with avocado and tomato.
