Ingredients:
- 3 ripe bananas
- 1 cup blueberries
- 1 cup almond flour
- 1 cup coconut flour
- 1/4 cup honey/syrup
- 1/4 cup coconut oil
- 6 tbsp arrowroot powder
- 2 eggs
- 2 tsp vanilla bean paste
- 1/2 tsp baking powder
- 1/4 tsp salt
- Handful almond flakes, to garnish
Instructions:
- Pre-heat the oven to 180c and fill a muffin tray with muffin cases.
- Mix the dry ingredients together in a bowl.
- In another bowl, mash up the ripe bananas with a potato masher before adding all the wet ingredients and mixing together well.
- Combine the dry ingredients with the wet ingredients and just for a few minutes, continue to mix until all ingredients are well blended.
- Fold in the blueberries (leaving out a handful to garnish afterwards), before pouring the mixture into the individual muffin cases.
- Place the muffin tray into the oven for approximately 20 minutes or until a knife placed in the middle of one of the muffins comes out clear.
- Garnish with the almond flakes and remaining blueberries and enjoy!
